But I’ve been told- and instructed that cast iron is not to be used above med heat.. right from Le  Creuset - soooo

Town where I grew up had an all night hot dog place called "Jay's hot dogs". It was downtown. I see it has moved to the burbs. Jays was very popular with winos. I learned about street cred there. I've always loved winos.

 

The new place is way too fancy for me. It has no soul like the original jays.

For me it's generally New York Strip Sirloin.  Occasionally, I really want good Top Sirloin - bigger, leaner cut.  I like my steak seared, then flame broiled over oak cooked medium to  well - pink middle.

If you want to have the best cabrito (goat meat) in the country go to the mexican barrio in Aransas Pass Texas to a place called Mom"s.

OK...  medium  heat will get the  pan very  hot if you give it  enough time.   

 

I use the little back  burner  on the left hand side to  sear, and I guess  to about  medium  high-ish to sear and  set the  timer  for 6-7 minutes to get  the  pan hot.

 

So you are correct.

 

 

You can  have a   very  hot pan with  medium heat  with  cast iron, jut give it  time to  energize.

There are great places like that all over Texas....

 

One on Austin called El Borrego de Oro......cabrito stews, soups, tacos.....its heaven
