I'm cooking me 2 Sugardale Superdogs for lunch (what can I say I like my weiners big and juicey). For supper I am going to bake some chicken thighs

Actually the menu has changed, I am making Pork steaks instead of Chicken Thighs. Tomorrow I am going to make the Thighs. Might even fry em. IDK tho.

I LOVE grilled stuff. Why is it that guys are so good at it? I can't get it right no matter how I try. I like stuff almost incinerated on the outside and medium on the inside. Kind of hard to do.

I guess. I just don't get it. I'm not that much of a meat chick but I really like a bite of it blackened/charred/heavily grilled. :wub: My friend Georgie is the grill master. He can grill Jello and make it good! :lol:

New years Day, made a nice fresh ham. Had it boned, so I could stuff it with Genoa salami, fresh Italian Parsely, fresh Basil, garlic and Locatelli Romano. I rubbed it with EVOO, garlic, oregano, basil salt and cracked pepper. Tied it up, roasted it until it hit a nice warm 170. With that some nice garlic mashed potatoes, and some mixed veggies.

170 is kinda high for a ham... You are drying it out.. you want to pull it at about 150 and let it rest for 20 minutes and serve.

150 for cured ham. This was a fresh ham roast. It wasn't dry at all.

Hoppin John every New Year. Also a smoked ham shank coated with brown sugar and apricot preserves on the rotisserie. I do love Low Country Cookin. Ham shank bone always the best for bean soup ( I use black eye peas ). Then Key Lime pie. Last few years I put on more than I care to every winter, so I cut back a bit.

    I know this one, this new chat thing. I've seen it called the "shoutbox" among other things in my past. Very hard to hide from the chat box. The question is asked, there's no time to go search what other folks think, this is real time. Only seconds should be between chat box replies. This one is made for me.
